Sausage Stuffed Onions - August 2015
Sausage Stuffed Onions are the Recipe of the Month for August! This is a great recipe for local food right now, so come support your local farmers and enjoy this delicious slow-roasted meal! [caption id="attachment_2060" align="aligncenter" width="300"] Image from Food.com.[/caption] Ingredients: 4 large onions 1 lb sausage, hot or your favorite style 1 large tomato, diced 1 cup shredded cheddar cheese Optional: 1/3rd cup grated apple 1. Preheat oven to 350°. Peel off onion skin. Slice off bottom of onions so they sit flat. Slice off top of onions too, leaving a 2-inch diameter of cut onion at the top. Scoop out the inside, but leave enough that the onion stays sturdy. Leave a wall of onion at least 2 layers thick. Chop up about half of the scooped out insides. 2. Fry the sausage, separating it into chunks as it cooks. When sausage is about half-cooked, add in the chopped onion. When sausage and onion are cooked, add in diced tomato and optional grated apple until cooked through. Turn off heat and add cheddar cheese to the mix. 3. Spray a baking dish with nonstick spray. Spoon sausage mixture into the previously prepared onion shells, packing down tightly. Put filled onions in dish, and bake until onions are tender and beginning to brown, about 60 minutes. This recipe lends itself to customization, so if you want to try the same recipe with bell peppers or banana peppers instead of onions, or with different ingredients in the stuffing, do it!
